Bacon and courgette spaghetti
Ingredients
400g spaghetti
40g butter
3 garlic cloves, peeled but left whole
250g courgettes, cut into batons
8 rashers of streaky bacon, cut into pieces
80g Parmesan
Salt
Pepper
Method
Put your heavily salted water on for your pasta.
Put your pasta in to cook according to the packet instructions - spaghetti usually takes around 9 minutes only.
Meanwhile melt the butter in a large frying pan or wok and add your bacon, cook until it is crispy and golden. Add the garlic cloves and the courgettes and cook until the courgettes are soft and golden.
* Before draining the pasta, take out a cup of water and reserve.
Meanwhile finish off your sauce. Remove the garlic, add the Parmesan and roughly 100ml of water and stir, check for seasoning, remembering the pasta water is heavily salted so it may be no more is needed.
When the pasta is done stir the pasta and sauce together, put into bowls and top with some added freshly ground black pepper.
