Calabrese spiced Parmesan breaded mussels
Ingredients
2 boxes of ready prepared mussels - roughly a kg
50g Calabrese paste or nduja
125g butter
Salt and pepper
4 slices of thick white bread, blitzed
50g Parmesan
Method
Wash the mussels and remove the mussels from the shells. Break the shells in half and put the mussels into half a shell.
Mix the butter and Calabrese sausage with an electric whisk until combined. If you don’t have a whisk then by hand whip the butter until sausage and slowly add the sausage and keep mixing until all combined.
Mix the breadcrumbs, the Parmesan and black pepper.
Put some of the spiced butter into the mussel shell and top with breadcrumbs.
Grill on a medium heat until golden, about 7 -10 minutes.
