Charred meat free fillet with salsa

Serves 4

Preparation: 30 minutes
Cooking time: 20 minutes

Ingredients
Quorn chicken fillets
4 corn tortillas

For the salsa
1 tin of sweet corn or 340g of frozen defrosted
1 smallish red onion
1 red chilli
1 avocado
1 lime
½ tsp caster sugar
Salt and pepper 
1 tsp olive oil

For the spiced lime mayo
¼ tsp ground cumin
¼ tsp ground coriander
¼ tsp paprika
¼ tsp chilli powder
Fresh ground black pepper
½ tsp salt
6 tbsp mayonnaise 
Juice of a lime

To make this vegan just use vegan mayo and whatever meat free fillets of your choice

Method
Preheat your grill and start to cook your quorn fillets according to the packet instructions.

For your salsa, put the sweetcorn in a bowl, finely dice the red onion and red chilli and place in a bowl. Cut the avocados into fairly small chunks and add to the bowl.  Juice a lime straight into the bowl and stir through. Sprinkle over the sugar, salt and pepper and stir through. Taste and if it's too sour add some more sugar or more salt and pepper if needed.

Mix the spice ingredients with the mayo and lime juice, check the seasoning.

To dish, take a flour tortilla (heat if you wish), put a large spoonful of the mayo over the bottom, add a large spoonful of the salsa and top with the fishless finger.  Enjoy!
