Christmas chocolate mince pie filling
Ingredients
200g mixed dried fruit with peel
100g prunes, cut into smallish pieces
50g dried cranberries roughly chopped
2 tbsp cocoa powder
1 tsp allspice
2 tsp ground cinnamon
85g golden syrup
85g dark muscovado sugar
60ml coffee liqueur
2 oranges, zest and juice
85g butter
Method
Put all the ingredients into a large saucepan and stir on a medium heat until the butter is melted and the ingredients are totally combined. Cook for 10 minutes to reduce slightly and turn off the heat and leave to cool. You can then either use immediately or put into your fridge to use later.
If you want to store for longer than a few days then you will need to sterilise your jars. To do this, wash the jars and lids in hot soapy water and rinse in hot water. Put the lids into freshly boiled water and put the still wet jars into your microwave on high for 45 seconds. Immediately fill with your mincemeat.
