Christmas red cabbage
Ingredients
30g butter
1 medium red onion, chopped
1 red cabbage, quartered, cored and finely shredded
50g cranberries
2 star anise
3 cloves
50g light brown sugar
250ml cranberry juice
Salt
Pepper
Method
Melt the butter over a medium heat and add the red onion and cranberries, cooking for around 5 minutes, without browning.
Add all remaining ingredients and stir well. When the liquid starts to bubble, reduce the heat and cook until softened, 15-20 minutes. Check seasoning. You can now serve now or reheat later.
