Christmas spiced short ribs
Ingredients
½ tsp garlic granules
1 tsp onion granules
¼ tsp course black pepper
¼ tsp celery salt
1 tsp chipotle chilli flakes
2 tsp smoked paprika
Salt
2kg ribs, short beef or pork
4 shallots, finely chopped
4 garlic cloves, finely chopped
4cm piece of ginger, finely chopped
250ml orange juice
50g golden syrup or honey
600ml of beef stock
4 tbsps soy sauce
2 star anise
2 cinnamon sticks
8 cloves
Method
Put the rubs into an oven dish. Mix the ground spices and put over the ribs and leave for an hour.
Preheat the oven to 160c. Put the shallots, garlic and ginger into a small pan and with a tbsp of oil sauté until fragrant and soft. Mix the orange juice, golden syrup, stock and soy sauce and add the sauteed vegetables. Turn the ribs so they are bone up, pour the sauce over the ribs, cover the pan with foil and put into the oven for 2 hours, checking every 30-40 minutes.
After 2 hours remove the foil and cook for a further hour, basting every 15 minutes or so.
If the sauce is not thick and sticky then put the sauce into a saucepan and cook over a high heat until reduced.
