Victoria was not feeling great today and so to make her feel better I made her a chocolate and muscovado fudge cake.  The cake itself was so easy and quick, the icing and the cake batter took less than 10 mins to make and get into the oven.  The recipe said half an hour but mine actually took 1 hour 40.  The cake is moist and so delicious and the icing was very rich and dare I say grown up?  My daughter has a super sweet tooth so I added some cream and caramel condensed milk which strayed a little from the vegan origins but it was so nice.  My first successful vegan cake!  So proud!
