The gorgeous warm weather (and a long lunch full of cheese) meant I just wanted to do something light tonight. The butcher had some beautiful chicken so what better than a simple Caesar salad. I didn’t have croutons or dressing but had bread to make croutons and everything needed to make a Caesar dressing.
I found a recipe online which had rave reviews so I thought I would give it a go. The recipe made a lot of dressing so I thought I would halve it. Big mistake. So turns out this is one of those recipes which you cannot just halve. The dressing did not emulsify and just stayed runny. I REALLY hate failing and so decided to start from the beginning with the correct amounts and thankfully it worked. Lesson learnt. I think because one of the blades in my processor is high it just didn’t mix it enough.
After all of that was it worth it? The dressing was nice but just a little too sharp and the mustard too prominent.
So Caesar dressing is another recipe on list to find a better alternative. So the list now reads appeltert, volcano chocolate cake and Caesar dressing. I don’t like not having the perfect recipe so will just have to keep making them until I find it. Lots more appeltert and chocolate cake? Shame ;-)
