It has been a busy month and today cutting the onions I realised it has been quite some time since the knives were sharpened.  How did I know?  My eyes were suffering really badly.  If your knives are not sharp then instead of cleanly slicing through the layers, the cells are crushed and so more enzymes are released into the air to irritate your eyes.  It is amazing the difference a sharp knife makes and cutting onions is a breeze. 

To keep your knives sharp you should use a sharpening whetstone once a month and each time you use a  knife you can use a steel.  This will keep them in tip top condition. Also avoid using your knife on a hard surfaces such as glass, marble, plates etc. as this will blunt your knives quickly and you risk them slipping.

If you have not sharpened your knives for some time (or at all) the first time you sharpen them will take longer than it will subsequently but it is really worth doing. It also makes chopping and cutting much safer as you don’t have to apply as much pressure and the chance of the blade slipping is less.

Take care of your knives and they will last many years.
