I am working on a couple of different (but interlinking) projects at work and today has been really, really full on.  I was going to make a sloppy joe sweet potatoes but the thought of standing in the kitchen for any length of time was just not something I thought I could do without throwing myself down kicking and crying. So what better during these times than a jacket potato.  We have sour cream and we have chives and so that is what we did. It was so comforting and delicious and I love sour cream and chive.  Best of all, total time in the kitchen was less than 10 minutes.
