So today I was in my office in London for the PSPA bake sale.  The trains are now incredibly busy and there was little room for my big bag of cakes.  It makes me sad that little has been learnt from the pandemic, the city is heaving, the trains heaving, life has returned to 'normal' and yet everything that was nice in the pandemic is being lost.  To me it is such a shame and I would love to preserve the good things that I found works for us. 

Back to the bake sale, there was lemon cupcakes, vanilla cupcakes, pistachio cakes, madeleines, chocolate and coconut macaroons, chocolate and muscovado fudge cake, a vegan chocolate and muscovado fudge cake, lemon and courgette cake, white chocolate cookies, chocolate pastry, ginger biscuits, chocolate covered flapjacks and clotted cream and strawberry scones.  We raised over £750 which is just wonderful.

After a busy day we wanted a fast meal and so decided to give the Pad Thai one last go before I bin it and forget all about it.  This one was PERFECT.  I cannot tell you how relieved I was.  It really did taste like one you could buy.
