Sometimes deciding what to cook is so difficult and never helped if I am tired. Chatting today and talking about South Africa somehow pineapple chicken - which I love - came up. It is very much like sweet and sour which is another firm favourite. For a change today we cooked a whole chicken rather than pieces and roasted it with Portuguese chicken spices and then once the chicken was almost cooked we glazed it with the sauce. We served it simply with rice. It was so good, I could easily have eaten another portion but managed to control myself with the knowledge there was leftovers for later in the week when we don’t feel like cooking.
