I have so many recipes I want to try and, unless they are in a book, they sit in my OneNote file as we test and try and tweak and work our way through them. Some are amalgamations of other recipes I see and think how they would work in other ways, some are recipes I have seen and want to try, and some are just inspiration or pictures that wait for me to find them again, pick them up and make them into a dish.
I have lots of different ideas and recipes for takes on carbonara which we love and having lardons and eggs to use up I went on the hunt for a recipe to save wasting either. I found in my notes orzo carbonara, for which you will find very many different recipes online if you search. We have just finished our version and (Italians look away now), I can I tell you that this was, in my opinion, better than spaghetti carbonara (which I love). It felt like a luxurious, special risotto in many ways, the sauce coated the pasta perfectly and it was rich and filling and honestly just yum. Easily one of the best dishes we have done.
