We had maybe half of our roast beef left and all I could think about was roast beef, horseradish and rocket sandwiches (with roast potatoes because, well, it is Christmas).  It was so simple but so so fantastic.  The beef was really beautiful with such a great taste.  

I have to say was disappointed with the porcini butter that was on the outside of the beef as rather than melt into the beef it sort of sat on top in a kind of odd way. and really did not do much. Next time I would just roll the beef in the porcini powder and sear. Luckily the beef was so nice it did not detract and the sandwich was divine.
