So the recipe testing carried on today with the vegan option, almost like a non-meat loaf.  It was actually easy to assemble although it did take some cooking time.  I blitzed up chickpeas, stock, some seasoning and mixed through vital wheat gluten, kneaded and shaped and then steamed for an hour. While that was cooking I made a light gravy. Once the loaf and gravy had cooked I covered the loaf in the gravy and roasted for an additional 30 mins.  

I was really disappointed with the gravy and felt it needed to be richer so take 2 needs to be done with that in mind and then it will be spot on.
