Rhona is still feeling really unwell and so this morning asked for a spicy laksa. I was really pleased because I have been doing a lot of research on laksa and coming up with my ultimate laksa recipe so it was good to give it a road test. It was actually a huge amount of work, making the paste and the stock (which involves roasting a chicken) and then the broth. For a super silky smooth broth you need to cook out the paste, add it to the stock and then sieve it out, squeezing out all of the aromatic broth that you can. Then you cook your noodles and meats and veg and bring it all together.
I was really impressed with how it tasted, it was so full of flavour and lovely and everything I had hoped it would be. My only question is should it be as spicy as it was? We liked it so I guess that really is all that matters, for others they can reduce the spiciness if they wish.
