Today I was back on the hunt for the perfect appeltert and really found it. I made them into small puddings but you can easily make a large one. The recipe will be up in a few days but this is the ultimate ultimate appeltert. I feel really quite proud of myself.
I discovered something so good, I see a future of mash potato before me for the rest of winter. It was chicken skin mashed potatoes. Now on first reading this you might think you are not sure of it but honestly it’s divine and you must, must try.
You take a large chunk of butter and put into a saucepan with the skin from 4 chicken breasts. Cook the skins on quite a high heat until they go crispy. Take them out, season and cut into pieces. Keep the butter for the potatoes.
Mash the potatoes and then add the butter along with cream and seasoning. When you dish up top with the crispy skin.
All you then need is a good gravy and the world feels great.
