One of the nicest parts of the Christmas period is brandy and coke Gammon which is honestly one of the most fantastic things we eat. I always get a 2kg gammon because I like to have it for a few days.  It is lovely in sandwiches or put on the top of pea soup.  You could also use the stock you cook your ham in to make your pea soup, it gives a wonderful flavour and wastes nothing.

Today we had leftover gammon and pickle sandwiches, it is just so good. If you have never tried gammon it is the easiest thing ever.  Just cook in cola broth, then make a syrup and cook in the oven.  It takes a few hours but it is easy as it is all hands off apart from about 10 mins.
