The weather was surprisingly cold today and flicking through one of my cookbooks a ham parsley and bubble and squeak pie picture jumped out at me. It was chunks of ham (gammon) in a parsley sauce topped with golden brown bubble and squeak which I absolutely LOVE.
I worried it would be dry but it wasn’t at all and it tasted so good. The cabbage leaves that were golden were divine, next time I will caramelise the cabbage just a little further and leave it to fully brown on the top as I think it will really make it taste even better.
