We have an abundance of blackberries thanks to Kerryn and Ian picking as they walk Bo.  I thought a take on our apple streusel cake may be nice as you have the crunch and the sweet topping with the somewhat tart blackberries.  Anyway, it was really lovely and worked a treat.  To adapt the cake just remove the cinnamon and replace with a tsp of vanilla in the apple mix.  Cook your apples and then remove the slices from the pan.  Add half of the blackberries and smash down gently so they just break apart. Stir through and leave to one side to cool.  When you assemble, add the remaining fresh blackberries on top of the apple slices and then continue on. 

The weather forecast was not great and so we decided to cook chicken and chorizo stew with little chippies.  Obviously by mid afternoon it was gloriously hot.  We did however decide just to carry on and I am so glad we did.  I forgot how delicious this recipe was, especially with the sweet gorgeous crispy potatoes. YUM.
