I had a couple of friends, Sue and Caroline over for lunch today which was absolutely lovely.  The weather was dire and it was literally pouring down. Unfortunately this meant we had to eat inside but even so it was great to catch up and hours went by and it felt like no time at all.  We had prosecco and cheese soufflés with a pear, pecan and prosciutto salad.  What I love about the soufflés is that you can prep everything beforehand and then when your guests arrive just throw them in the oven and half an hour later lunch is ready.  They look so impressive but are really quite easy if you follow the recipe properly.
