Everybody here loves brownies. I try to pretend when I cook them that they are just for the kids but being honest and just between us, that is not really true. There is something really comforting about the deep chocolate with the occasional hint of caramelised white chocolate dotted through. Although not a hard recipe to get ready for the oven, brownies can be tricky, not long enough they remain like cake batter and too long and they go dry and taste like a cake. What you need to remember with a brownie is that they keep cooking once they are removed from the oven so I tend to take mine out of the oven when my cocktail stick comes out with just a little mixture on it, I leave it in the tin to cool completely and they tend to then be the perfect fudgy texture.
