We were trying to come up with a menu for the week ahead and going through the freezer found leftover massaman from a few weeks ago and after trying to decide what to do with them, we made these absolutely delicious curry puffs.  We decided to make rough puff as we had no puff pastry but if you wanted to make it easy and super quick you could use ready made. I do absolutely love puff pastry.

They smelt so so good cooking, you could smell the curry and the butter pastry.  As soon as they came out of the oven we broke one open to ‘quality control’ and I burnt the roof of my mouth ha ha - they really were worth it.
