There is this really interesting South East Asian dish, bogan larb. It is essentially spiced savoury 'minced' meat or tofu (although some chefs, David Thompson to name one think that the meat should be hand chopped and not minced) with peanuts, spices and chillis and served in a leaf. If you were in Asia it is likely it would be served in a beetle leaf but here you would probably serve it in a little gem lettuce leaf. It is really delicious and because it is in a lettuce leaf it feels lighter, healthier and much less heavy. I thought the meat was too light in flavour and so next time I will go heavier on the spicing and flavourings.
