I was watching man v food the other night and it was all about Chicago and the juicy Lucy.  I loved the idea of a cheeseburger having the cheese inside the patty rather than on the top.

I thought about how best to do the cheese because if it doesn’t melt then the whole thing would be ruined.

So after much thinking and researching I decided to melt a mix of cheeses and cream and make a ‘cheese slice’.  It worked really really well, the cheeses were tangy and really tasted great in the patties.  A fabulous recipe and definitely one I will be repeating.  All it needed was brioche, lettuce, sauce and gherkins - YUUUUUUM.
