So I am still reading Marcus Wareings book, Marcus' Kitchen.  There is a very fresh and lovely sounding spicy mango and chicken salad which I have had my eye on and so tonight we finally got around to making it.  It was very spicy thanks to the birds eye chilli but because the mango was so juicy it was not too bad.  You should use an under ripe mango but despite ordering a ripen at home mango it was - of course - perfectly ripe!  Still it worked so well and I think the juicy mango actually made it better so I was not unhappy.
