Today I was pondering what to make with the chicken I have as the dish I had in mind I just did not fancy any more. Do you ever find that happens? Anyway it suddenly came to me, chicken pot pie. Little individual pies. I cooked off soffritto in butter, added flour to make a roux then added stock to make a sauce and checked the seasoning. I then added chicken and cooked until the sauce was glossy and the chicken cooked through. I cut out pastry and lined a muffin tin, added the cooled filling, put on a lid, egg washed and cooked for half an hour. They were so good I burnt the roof of my mouth and failed to know when to stop.
