Club braaibroodjie
Ingredients
8 slices of smoked streaky bacon
1 chicken breast
½ tsp chicken seasoning (or just salt and pepper)
2 tbsps mayonnaise
½ tsp of dijon mustard
8 slices of thick sliced white bread
100g cheese, grated
2 tomatoes, sliced
ground black pepper
Salt
Butter
1 avocado
4 skewers
If you want to really push the boat out you can make each sandwich with 2 chicken bacon mayo sandwiches so that each sandwich is 6 slices of bread rather than 2, just double the chicken, bacon, mayo and avocado.
Method
Fire up your braai or bbq and heat until the coals are white hot. When they are hot cook the bacon until gorgeously browned and crispy. Put to one side.
Season the chicken and cook over the hot coals turn frequently until cooked through, around 15-20 minutes depending on the size.
Cut the chicken breasts into pieces. In a small bowl, mix the mayonnaise and mustard and then with a fork mix through the chicken, pushing and mixing so that the chicken breaks down a little and mixes fully with the mayo. Season with salt and black pepper and mix again.
On to 2 slices of unbuttered bread spread the chicken over and top with the bacon. Put another slice of bread on to each so they are fully enclosed sandwiches.
On to 2 more slices of bread put the cheese and tomato, season and top with a slice of bread on each.
You should now have 4 individual sandwiches. Butter the top of each sandwich and put on to a braai grate, butter side down. Carefully butter the top and close the grate.
The fire should now have reduced in heat sufficiently enough to not burn the bread. Cook, turning frequently until the bread is golden brown and the cheese has melted. Remove from the heat and remove from the grate.
In a small bowl, put the avocado flesh and mash. On the top of the chicken sandwiches, spread the avocado out equally between them. Top with a cheese and tomato so that each sandwich is now 4 slices of bread, joined by the avocado.
Cut into quarters and skewer to hold together.
