Feta and caramelised onion tart
This is a super speedy and easy starter or lunch and is actually a bit of a cheat as you can use shop bought ingredients to make things even quicker
Ingredients
Puff pastry - either 1 sheet of ready rolled or 1 block (around 375g)
4 tbsps caramelised onion jam, chutney or marmalade
200g feta cheese, crumbled
Freshly ground black pepper
Salt
Method
Preheat your oven to 200c. Get a baking tray and line with baking or parchment paper.
For Valentine's Day I like to make these heart shaped but circles or squares work just as well. If you are making hearts, on a piece of paper draw a heart and cut it out and use as your stencil. If you are making circles get a saucer or small side plate. Unroll or roll out your pastry (to the thickness of a £1 coin) and draw around your heart or circle with a knife. If you want rectangles just quarter your pastry.
When your chosen shape is cut out you need to score the inside as you want the edge to puff and the middle to not rise. To do this, go in from the edge about 2 cm and with a blunt knife, draw the same shape inside all around, being very careful to only score the pastry and not cut through. Take a fork and gently stab (do not go through the pastry) the inner shape all over as this will prevent the middle from rising. Place the pastry on to your lined baking trays.
Take 1 tbsp of onion jam and spread it out over the inner part of tart - ensure you leave the outer 2cm without. This won't look enough and you will have to work to get it to spread evenly but any more will taste too much once cooked. Repeat with the other tarts. Take your feta and spread amongst the tarts again leaving the outer edge. Grind some pepper over the top and put the tarts into the oven for 25-30 minutes until the edges are golden and the base crispy.
Put a touch of salt over the top and serve with a simple salad.
