Halloumi and harissa wraps

Serves 2

Preparation time: 15 minutes 
Cooking time: 5 minutes 

Ingredients
4 tbsp mayonnaise  
2 tsp chipotle paste or ½ tsp of chipotle chilli flakes and 2 tsp boiling water 
¼ tsp ground cumin 
Salt 
Pepper 
225g halloumi, sliced 
2 wraps 
Rocket 
4 tomatoes, sliced 

Method
Start with the chipotle mayo.  Put the mayo, chipotle paste and cumin in a small bowl and mix together.  Season to taste.  If you are using the flakes then top with boiling water and leave to one side for 10 mins before mixing with the mayo as it softens the flakes. 

Get either a griddle pan or frying pan on to heat.  When hot add a touch of olive oil and your halloumi.  Cook until golden, 2-3 minutes per side.  

While the Halloumi is cooking get your wraps ready.  Smear the middle of the wrap with some of the dressing, then  put a handful of the rocket on the top.  Put the halloumi over the top of the rocket and top with the sliced tomatoes.  Put salt and freshly ground black pepper over the top and fold the wrap.
