Halloumi, harissa and honey baguette
Ingredients
½ tbsp olive oil
250g halloumi, cut into 8 slices
1 baguette
2 tbsp rose harissa
2 tsp honey
3 tomatoes, sliced
Freshly ground black pepper
Herbed mayonnaise
2 tbsps fresh mint, very finely sliced
1 tbsp fresh parsley, very finely chopped
4 tbsps greek yoghurt
2 tbsps mayonnaise
1 garlic clove, minced or crushed
½ lemon
salt
Method
Preheat the oven to 180c and put an oven dish in to the warming oven.
Meanwhile, put the fresh herbs, yoghurt, mayonnaise, garlic and a squeeze of lemon and pinch of salt into a bowl and mix. Add more lemon and salt as required.
Meanwhile heat your oil in a frying pan over a medium heat and fry the halloumi for a couple of minutes on each side until golden.
Cut the baguette in half so that you have two equal sized baguettes and then cut through the middle to open your baguette up. Smear the harissa on the bottom half of each baguette and the herbed mayonnaise on the top half. Lay the halloumi over the top of the harissa on both halves and put the tomatoes on top of the halloumi. Drizzle with the honey and season well with the black pepper. Put the top of the baguette on the top and gently but firmly press down.
Put your filled baguettes very carefully into your oven dish against the side to prop them up. Put them into the oven for around 5 minutes until warmed through and slightly crusty.
