Lemon pasta
Ingredients
400g linguine
1 tbsp olive oil
2 garlic cloves, very finely chopped
1 red chilli, very finely chopped (optional)
1 shallot, very finely chopped
1 large lemon, juiced and finely zested
1 tbsp parsley, finely chopped
½ tsp of sugar
40g butter
20g Parmesan, finely grated
40g rocket
Freshly ground black pepper
Salt
Method
Bring a very large pan of heavily salted water to the boil and cook the pasta according to packet instructions.
Meanwhile in a small frying pan heat the olive oil over a medium heat and slowly cook the garlic, chilli and shallot for around 5 minutes until soft and translucent.
Add the lemon zest and juice, parsley, sugar and butter and ½ a cup of the pasta water and stir until a gorgeous sauce is created. Add the parmesan and black pepper and stir again.
Check the seasoning and adjust the salt if necessary.
Drain the pasta and stir through the sauce using a fork and a spoon. Serve immediately.
