Pea purée
Ingredients
200g peas
Sprig of mint
1 tbsp butter
Salt and pepper
Method
Bring the peas to the boil and cook for 3-5 minutes until sweet and just cooked. Keep 5 tbsp of the water. Drain and put peas and all ingredients into a blender and purée until smooth, adding a tbsp of water at a time to slacken. If you want a very very smooth purée then pass through a fine sieve. Reheat carefully when you are ready to eat.
