Peri peri chicken

Serves 4  

Preparation time: 10 minutes
Cooking time: 15-25 minutes
Marinating time: 1-6 hours

Ingredients
4 chicken breasts or 8 boneless chicken thighs
200g peri peri sauce

Method
Put the marinade over the chicken in a dish, cover and marinate for at least an hour. 

To cook the chicken you can either do this on a braai or bbq if outside, or a medium grill if inside. You want a little char and both of these ways will give you that. Turn every few minutes carefully and rebaste as you turn.   The exact time will depend on the thickness and cut of your chicken. Before serving, do check it is cooked all the way through before you sit down to eat.

While the chicken is cooking, bring the leftover marinade to the boil, reduce the heat and then use this to baste. Serve with the extra sauce.
