Pwdin Eva (Eve’s Pudding)
Ingredients
2 eating apples of your choice
½ lemon, juiced
¼ tsp ground cinnamon
30g soft brown or light muscovado sugar
50g butter
50g sugar
1 eggs
½ tsp vanilla extract
50g self raising flour
Equipment
A 15cm cake tin - ideally not spring form but if it is springform then fully lined so the apple juices do not escape
Method
Preheat the oven to 180c.
Peel and core the apples and cut into thin-ish slices. Pour the lemon juice over and stir. Add the lemon juice, cinnamon and sugar and mix again.
Cream the butter and sugar for a few mins until light and fluffy. Add the vanilla and then eggs one at a time, mixing well after each. Add the flour and mix until fully incorporated.
Put the apples in the tin and top with the cake mix. Cook in the centre of the oven for 25-35 minutes until golden and firm to the touch.
