Rhona’s coleslaw
Ingredients
3 tbsp mayonnaise
Juice of 1 lemon
1 tsp Dijon mustard
1 tsp sugar
Salt and freshly ground black pepper
⅓ white cabbage, trimmed and shredded
A bunch of spring onions
2 large carrots, peeled and coarsely grated
Method
Place the mayonnaise, lemon juice, mustard and sugar in a large serving bowl. Season with salt and freshly ground pepper and mix well to create the dressing for your coleslaw.
Once you have peeled and sliced/grated all your vegetables, add to the dressing and mix thoroughly to coat all the vegetables.
Cover and chill for at least 30 minutes before serving.
