Salmon pesto filo pie

Ingredients
50g butter  
4 salmon fillets
3 tbsp pesto 
100g soft cheese 
Salt 
Pepper 
4 sheets of filo pasty

Method
Preheat the oven to 180c and put the salmon in to an oven dish.  

In a small bowl mix the pesto, soft cheese and season. 

Put the pesto mix over the top of the salmon. 

Cut the filo sheets in half.  Melt the butter and brush over one of your half sheets and then take the other half and put it on top. Fold this double sheet in half and rebutter and then you need to wrap around the salmon.  To do this, take one of your pesto topped salmon fillets and place on the long edge of the buttered filo. Carefully fold the filo over the salmon until the pesto is at the bottom and then fold over the left side of the filo and then the right side so that all of your salmon is now encased in buttery filo. Continue wrapping the filo around the salmon until that sheet is used up. Repeat with each sheet covering the salmon completely. 

Cook for 25 minutes until the filo is golden and the salmon cooked through.
