Self-saucing chocolate pudding
This is the easiest chocolate pudding ever and is simply delicious. It takes 5 minutes to make it before you throw it into the oven. The worst part is after making your gorgeous sponge you pour water all over the top and every time I do it I think how will this work - yet every time it does. The house will fill with the nicest smell ever and will make you feel impatient.
Ingredients
For the pudding
150g self raising flour
110g caster sugar
25g cocoa powder
30-50g chocolate bar, we like aero orange or mint
60g butter, melted
125ml milk
1 egg
For the sauce
250ml boiling water
60g hot choc OR 25g cocoa powder and 75g sugar
Method
Heat the oven to 180c. Take the chocolate bar and bash it in the packet until it’s broken.
Place the flour, cocoa, sugar in a bowl and stir. Put the milk, melted butter and eggs in a jug and mix together until there are no floury lumps, ideally with a whisk.
Fold in the chopped chocolate.
You can now either make small puddings or a large one. If large, 30 x 20 x 6 cm is a great size, otherwise 6 small or 3 medium ramekins work. Butter your oven dish(es) and place on a baking tray.
Mix the hot chocolate powder with the boiling water and put on top of the pudding.
Put into the oven and make for 35-45 minutes depending on the size of your dish. You’ll know it’s cooked when the sauce starts bubbling up and the top is set.
