Spicy BBQ sauce
Ingredients
1 tbsp vegetable oil
2 echalion shallots, very finely chopped
2 garlic cloves, minced or very finely chopped
2 tbsps chutney (I used peppadew but any fruity one would be nice)
200g light brown sugar
100g tomato ketchup
2 tbsp Worcestershire sauce
3-4 tbsps chipotle paste
Method
Put the vegetable oil into a saucepan on a medium heat and add the shallots and garlic and cook for around 5 minutes until soft and translucent.
Add all of the ingredients into the pan and cook on a medium heat until the sugar melts. Cook for an additional 3 minutes.
Transfer the mixture to a small blender and blitz until smooth.
