Steak roll
This makes the perfect lunch or light meal but if you want to serve as a main meal, just serve with French fries.
Ingredients
2 x 250g steaks (whatever cut takes your fancy)
2 onions, finely sliced keeping the slices whole
2 tbsp oil
2 tsp butter
1 large baguette or 4 rolls
4 handfuls of rocket
Salt
Freshly ground black pepper
Method
First things first, turn off your smoke alarm for the next 10 minutes.
In a large frying pan with a tbsp of oil, fry your onions over a medium high heat. Season generously and stir often. When the onions are sticky looking reduce the heat to low.
Put a large frying pan on a heat heat. Put a little oil on your steaks and season with salt and freshly ground pepper. Put your steaks into your pan and cook for 2 minutes then turn. Repeat this every 2 minutes, cooking for 6 minutes in total for medium rare. Put 2 tsps of butter into your pan, turn off the heat and cost the steak in the melted butter. Leave to one side resting.
Cut and butter your roll and putter it. Slice the now rested steak into slices and put into the baguette, topping with the onions and rocket.
