Winter pasta

Serves 4 

Preparation time: 5 minutes
Cooking time: 15 minutes

Ingredients
400g Spaghetti or linguine pasta 
2 tbsp oil 
3 leeks, cut lengthways into 3 or 4 and then cut into slices
175g small brussels, cut in half if small or quarters if larger 
1 chilli, finely chopped 
4 garlic cloves, finely chopped 
175g peas 
1 lemon, juice and zest 
Parmesan *
Salt 
Pepper 

* If you don’t eat cheese just add salt and a tbsp olive oil 

Method
Put on a large pot of heavily salted water.  Cook the pasta according to the packet instructions. 

Meanwhile put the leeks, brussels and chilli into a frying pan with 1 tbsp oil on a medium heat stirring often for 5-7 minutes until soft. 

Add the garlic, peas and lemon zest and cook for another 5 minutes.  Add half a ladle of pasta water, the lemon juice and parmesan and stir. 

Put a cup of water to one side and drain the pasta. Add the pasta to the vegetables and stir through, adding a little more of the pasta water if you need it to be more saucy.  Check for seasoning, give a big grind of black pepper and serve immediately.
