Zanzibar fish masala spice mix

Makes enough for 1 curry

Preparation time: 5 minutes

Ingredients
1 tsp cumin seeds * 
1 dsp coriander seeds * 
1 tsp black peppercorns
8 green cardamom pods, shelled
½ cinnamon stick * 
1 tsp dried lemon grass *  
1 tsp ground ginger  
1 tsp turmeric  
1 tsp paprika 

* these need to be ground down to a powder. If you would rather, just use ground spices

Method
In a small frying pan, dry-roast the cumin, coriander, peppercorns, cardamom seeds and cinnamon stick until you can smell the aromatic aromas (around a minute). Remove from the pan and grind to a powder. Combine with the remaining ingredients.  

If you are using all ground spices then just combine all spices.
