I really love to have couscous for lunch, it is nicely filling, is packed full of fresh vegetables and is just so light and lovely. I really did not like couscous a few years ago because I thought it was bland and nasty but I think this is because I made it with water and yet expected it to magically transform and taste good - the same goes for polenta. The magic happens when you use vegetable stock and seasoning and then it is just lovely. These grains, unlike rice is really inexpensive and great value and they really are delicious.
