I had some leftover pizza sauce and some leftover puff pastry and so today we had little tomato and cheese tarts, they were just divine. You just roll out your puff and cut into rectangles. Inside of your rectangles you carefully make a rectangle indentation about 1 ½ cm in and then prick the middle with your fork, cover in your tomato sauce and top with fresh tomatoes and cheese - we used cheddar but it really works with whatever you have (you can add ham if you wish too) and then baked for 25 mins in a hot oven and hey presto, a really tasty delicious and easy lunch that takes under 5 minutes. It is even quicker if you use shop bought puff and if you want to use a ready made tomato based sauce you should feel free to.
