A couple of weeks ago we bought some bananas for a banana ice cream and while waiting for them to ripen we changed our mind about the flavour ice cream we were going to make and so these poor bananas sat on the side - the skins now totally black and shrivelled looking very unappealing. When life gives you black bananas, make banana bread! I had everything that was needed and so baked a gorgeous loaf. I say I had everything I needed, I could not find the sour cream in my fridge anywhere (obviously this was found without looking for it a few hours later) and so I subbed sour cream for double cream and the juice of a lemon. I can tell you it did not affect the taste of the bread one little bit. Might it have been better with sour cream? Honestly I thought not, I could hardly tell the difference.
