Today was a busy but happy day in the kitchen.  We were testing a new massaman curry paste and also clementine and spice peri peri sauce.  One of the nicest things I have had in ages at Nandos were the Clementine and Spice wings, a special before Christmas. It really evoked Christmas to me and so I was desperate to try to replicate it.

The theme of the day is spice spice spice.  The peri peri sauce was really spicy, so much more than the red peri peri sauce we make.  The golden peppadews are much spicier than the red ones strangely, and so even though I only put 8 dried birds eye peri chillies in rather than 12 it was still super hot.  Lovely, but hot.  I am really pleased with how it came out, so happy in fact that we had peri peri wings last night.   Matt clearly loved them as he polished off so many.

The new massaman was also much spicier than intended, not sure why really although I suspect it could be something to do with the 6 dried long chillies that are in the paste ha ha. I have been searching for the perfect massaman recipe for some time and although the one I had was good, it just wasn't perfect.  This paste was really good, the best yet I think so I will be updating my recipe and always making this one moving forwards. 

Yesterday it was fabulous but I thought I would leave this for a few days to see how much better it is when it matures.
