It is easy to forget how gorgeous vegetables are and how nice they are to have as a main meal, not just as a side dish after thought. Today we had stir fried vegetables with noodles which are absolutely divine. Heavy on the garlic ginger and chilli and you have a feel good do good meal. The great thing about a stir fry is it really can be with any leftover veg (or meat or seafood to be fair) you happen to have laying around, just wonderful. All you need to turn this into something yummy is soy sauce, katjap manis and hoisin sauce.
