We usually do meat free Monday but we had beef and wanted to make the stuffed pitas yesterday and so pushed our meat free day to today. I bought some beautiful portabellini mushrooms and decided to stuff them with vegetarian chorizo style sausages. We then topped them with cheese, threw them on the braai and ate them in some gorgeous crusty rolls. I do love mushrooms in rolls, the rolls soak up all of that gorgeous mushroom juice and, in this case, with the chorizo flavours. A simple, very easy, very delicious meal.
