It has been pouring today, all day. And, unusually for days when it rains, it has been cold. One of my favourite winter meals is fish pie. I love it, and my recipe is really good, the sauce has dill and parsley and the fish of choice is salmon, halibut, scallops and prawns. I like some parmesan in the mash because you get a very slight cheesy taste without it being heavy or greasy. Many people say fish and cheese don’t work but I actually think parmesan adds something special.
It’s so moreish , so delicious, warming and comforting and perfect for a cold day.
