Last year when we were doing the Man Behind the Curtain cookalongs we had this gorgeous halibut with chorizo pearl barley with a mussel veloute and last week I was looking for something and found the picture and wanted to try to replicate it.  By and large I think it went really well, my veloute needed a little refining but really truly it was divine.  I also think next time I make it it will be much less of a faff now I know what I am doing. I will put the recipe up soon.
